The kind that when you bite into it, a runny yolk begins to dribble out the sides of the sandwich and onto the plate, just waiting to be scooped up by the bread. This simple delight definitely tops my list of favorite breakfast foods.
In Indianapolis, look no further than Cafe Patachou for this king of breakfast sandwiches. In fact, at Patachou, a fried egg sandwich isn’t simply an item on the menu. The Broken Yolk Sandwich is an entire category here, complete with toppings like cheddar cheese, Indiana bacon, avocado, ham and salmon.
The Broken Yolk Sandwich comes with fruit or field greens as a side, but any lover of breakfast foods will tell you that it’s always best to combine savory and sweet. So I highly recommend ordering up some of Cafe Patachou’s famous cinnamon toast to go along with your sandwich. The 1/2 inch crust of cinnamon/sugar goodness on the bread will be almost as memorable as your sandwich.
